Celebrating Fathers’ Day! A Tribute to Khalid with a Surprise Milkshake Recipe!

Happy Fathers’ Day! 

After Khalid surprised me with that sweet Mothers’ Day dedication on the blog last month, I couldn’t wait to write one for him too. Khalid is a wonderful father. One of the things that drew me to him when we were dating was his love for his daughter, Asia. Outside of my own father, I had never witnessed such dedication from a father to his child like when I met Khalid. I always knew he would be the very best father to our own children some day and that's exactly who he is.

In our family, Khalid is definitely the protector. He is also deeply compassionate and dedicated. If we are the plants, Khalid is our soil. He grew up in Valencia in Trinidad, among hordes of fruit trees and dense nature. Perhaps that is where he learned to be so grounded. He holds us together at the roots. I am so grateful for the way he is.

This year for Fathers’ day, the kids got him a customized storybook that has all of their names in there with special paragraphs on how much they adore him as their Daddy. They love that they get to be free with him. He is more outdoorsy than I am, you see. He packs a hefty bag of food, toys and games and takes them to the park almost every weekend when the weather is nice. Now that they are a little older, they absolutely enjoy this experience of going to the park with him. They particularly enjoy the water park at Prospect Heights, especially because he doesn't care if they get soaked (unlike me lol). 

To celebrate his special day this year, we'll be spending the morning reading Khalid’s story book together. I am looking forward to seeing his reaction to it! We're also taking him out for brunch and spending a quiet evening indoors watching movies and getting some much-needed R&R. And of course…. ICE CREAM!

Khalid put together a fantastic Fathers’ Day menu for Island Pops with limited edition flavors he jokingly says are “ting for the back!” If you know what that means, you know. If you don’t understand what that means, ask him! 

 

His most anticipated flavor would be the soursop seamoss sorbet combo. He hasn't shut up about that one and I think it's his favorite of the bunch! If you read our blogs on Seamoss and Soursop, you would understand how these foods keep him so active, especially as he likes to play football with guys half his age! He also LOVES the Mackeson Chocolate Brownie flavor, so the family is going to surprise him with a new milkshake recipe made just for him, using it! 

 

Here's how we're going to make it:

Mackeson Mocha Shake

Ingredients:

3 scoops of Mackeson Chocolate Brownie ice cream

2/3 cup milk of choice 

Shot of espresso

Tbsp of melted chocolate 

Dash of Angostura bitters 

Whipped cream

 

Instructions 

1. Add ice cream, milk, espresso and bitters to a blender and mix for one minute or until a thick, smooth consistency 

2. Line the inside of a glass with the melted chocolate 

3. Transfer milkshake to glass tumbler 

4. Top with whipped cream and enjoy

The full Fathers’ Day menu flavors are Seamoss Soursop Sorbet, Pine Ginger Sorbet, Mackeson Chocolate Brownie and Beetroot Linseed. They’re available in store at 680 Nostrand Avenue, Brooklyn, New York or Online for delivery and pick-up. Perhaps you can mix them up into shakes too in your own celebrations today. I’m happy to get to share a bit about my dear husband, Khalid on the blog with you guys. You’re like family! Island Pops is our third child after all. We opened the shop 2 months after having our daughter Ella. It's a running joke at the shop that Ella and Island Pops are Irish twins! Also Khalid is the creative mastermind behind the flavors that you love from us, so we had to celebrate him a bit here on the blog too!
